Help for Plex server on Mac with two drives

Hi everyone, thanks in advance for any help.

I've got a Hackintosh that I'm using for a Plex Media Server (as well as a few other things: iTunes, Photos, Transmission, Sonarr, CouchPotato, &c.). Inside are two drives: 120 GB SSD for the OS and applications, and 4 TB HDD for storage. MacOS and Plex are both on the SSD, and the Plex video files are stored externally on a NAS.

However, in ~/Library/Application Support/Plex Media Server I noticed a while ago that Plex had created over 61 GB worth of data. And that wasn't good because it took up all the space on my SSD that I needed for the OS to operate smoothly.

If I understand correctly, on Windows it is possible in Plex settings to change the location where Plex stores files (I got that from this thread), but that the Mac version of Plex doesn't offer this option. Am I right?

Assuming there was no easy option in the Plex GUI to choose the location for this data, I tried using symlinks to move the files to my storage HDD, and point Plex to them. However, that wiped out everything and forced me to set up a new Plex library. I figured it wouldn't be so terrible to do a new library once.

But then recently (perhaps due to a Plex update or rebooting my server or whatever) I realized that the problem had repeated itself: my old Plex application files are still on the HDD where I moved them, but Plex server has created a whole new set of application files on my SSD all over again, and I'm down to a mere 1 GB of storage.

So I'm looking for help setting this up the correct way: Plex should continue to live in the normal location (~/Applications/Plex Media Server), my videos should continue to live in their NAS, and the Plex application files should live permanently in the storage HDD (/HDD/Plex files) instead of the SSD (~/Library/Application Support/Plex Media Server). Can anyone point me to solid directions that will persist even after a couple of months when Plex has been updated and my server has rebooted?

Just so we're clear, my Plex server (1.3.3.3148) and MacOS (Sierra) are both up to date.
