PMS acting weird (Due to Plex Media Scanner?)

The last couple of days we've had issues with Plex on our Apple TV 4, even though it has been running previously without problems at all. TV shows and movies will start to play as usual, but will at a random point stop playing and Plex will show the loading wheel on screen, and most of the time then quit playing the media file. If you try to start playing the media again, the screen quickly blinks and nothing happens. You then have to wait some time before you try to start to play something again.

I believe it coincides with me updating PMS to 1.1.3.2700 (Unknown from what version, but a quite recent one). I tried downgrading to 1.1.3.26xx, but that didn't help. I now noticed that Plex Media Scanner runs continuously on the server, reading at 40-70 MB/sec all the time, which I believe could be the cause, as the entire library is hosted on two external HDDs which likely are limited to reading at those speeds. After it reaches a couple of GBs read, the process is removed, but instantly spawns again. How do I stop it from running on a rampage like that?

I've attached server logs. Our server is running 1.1.3.2700 on a 2011 Mac Mini with 4GB RAM and and an internal SSD with IP 192.168.1.2 in the logs. Last time we tried to watch something on the Apple TV 4 was today (11th september) and we had visual artifacts for a couple of seconds at the time 19:50, a fall out with the loading wheel spinning for a few seconds at 20:08, and the same happening at 20:12 where the media never started again. Trying to play it after that timepoint, resulted in nothing happening.

I'd like some help as I don't know what to look for in the logs, thanks!
