Mobil Plex Server on External Drive

Before switching to Plex I kept all my movies on an external hard drive along with a copy of iTunes, that way wherever I went I could just plug in my drive and browse my library easily. Not being able to play files like .mkv, however, eventually pushed me to Plex since it retains a great interface. I know PMS is designed to stream media to your devices, but when I travel I often don't have any form of internet connection. Because of this I'm trying to run a similar arrangement with what I had in the past but with Plex.

My entire media library and some related applications are kept on a 2tb external hard drive (minus backups that stay home and etc.). This includes a copy of Plex. I'd like to just be able to plug my drive in, launch Plex, and browse through my media. My only issue is that when I shift to a new computer, even though the media and Plex comes with me on my drive, the metadata and other information does not.

Does anyone know how to tell Plex to store its information in a different location? I'm running updated plex on mac computers.

Edit: I just realized that I spelled Mobile wrong -_ - sorry lol
