Constantly getting "This server is not powerful enough..."

On an iMac 2.9 GHz Intel Core i5, using a nationally known cable internet provider, in Plex I am constantly getting a "This server is not powerful enough to convert video" message, and constant start-and-stop when streaming videos.

Don't touch that dial: so I go to the page in the Plex "help" (don't fall down laughing yet) section for that exact issue, which is here:

And there it tells me I should "increase the streaming video quality setting in the app." Do you think there's a link to where you can "increase the streaming video quality setting in the app," or ANY instructions on HOW to do that? You obviously don't know Plex "help." But don't fall down laughing yet.

So I go on a long frustrating search trying to find any information on that, and I end up at the "Settings" page, which is here:

And I find the section, with an image, that tells me how to change the streaming quality...AND NOTHING ANYWHERE ON THE PAGE LOOKS AT ALL LIKE ANYTHING IN MY PLEX MEDIA SERVER!!!!

Is this some sort of joke? Can there possibly be this much incompetence? How can anything possibly waste so much of people's time and call itself a "service"?
