Videos taken with phone not retaining folder structure

I copy my iPhone pictures and videos to a folder structure on my Mac manually. I organise by a folder for an event within a month by month folder. Each folder contains a mixture of photos and videos. When I point Plex at this folder structure and tell it they are photos it correctly retain my folder structure. However, when I do the same thing and tell Plex theey are videos it just extracts all the videos into a single flat folder.
