Plex completely broken - broke LaunchServices, never stops updating, corrupt databases, & more

As of about a week ago, I've become beyond frustrated with Plex. It's always worked fine, but now is completely and utterly broken.

It started when I tried adding some new content to it, as always. There should be no problems with the content, as the files have played fine for me otherwise, and work in other flex servers, as I've tested. The content was having serious difficulties scanning; it would get added to the library, and sometimes find matches, other times not. Sometimes it would load metadata, other times, no. Sometimes it would just load pictures, or info, but not both. I tried many many times to fix it, but couldn't.

After a while, I started getting the "There was an unexpected error loading the dashboard" error. The dashboard was not visible, but all of my libraries and content were otherwise usable (despite the above metadata issues). I couldn't resolve this, and ended up deleting my library and reading it.

While rescanning, my Mac completely froze up, so I tried rebooting. I was no longer able to log into my system, whether it be in safe mode, or not. I tried multiple recovery attempts and disk checks, and even reinstalled the OS (preserving data), but it wouldn't work. Eventually, the problem ended up being broken LaunchServices files, which had to be deleted so they could be recreated. They kept stalling overtime Plex tried to launIch on startup, as far as I can tell. It took me 4 days and absurd amount of Googling to figure this out, as well as rooting around through Terminal.

Now, I've got my Mac all up and running again, but the databases appeared corrupted. I tried updating them, and left it overnight. In the morning, all the content had showed up, but only a few items had metadata, and the libraries were still "updating", somehow - I don't have THAT much content.

At this point, incredibly frustrated, I completely uninstall Plex, removing all settings, preferences, databases, folders, everything, so I can start fresh. I reinstall, with a new download from the site, Add a library, hit update, and left it for about 12 hours. When I got home, again - all the content had been pulled, only one piece had metadata, and it was still "updating" the libraries. I cancelled the update, and then tried updating again. I got an error telling me the libraries could not be updated. I closed down PMS, and tried to restart it. It will no longer start.

What the hell is going on?
