Remote play and optimisation (UK)

Hi,
I confess to struggling to understand some of the nuances of Plex still but I'm trying! I'd appreciate some help on a few points.

  1. I seemed to have lost remote access...almost. Settings shows my Mac OSX (all latest software) media server is not connected to the Internet. It used to be but I recently installed the fantastic EERO mesh system and switched wifi off my Sky Broadband (UK) router. EERO now handles all wifi around the house but have I created a double nat problem? (I actually don't really know what double nat is, I just read it can be a problem). However, despite having no internet-connected Plex, I can still seem to access my library remotely, albeit very, very slowly and pretty much unwatchable. What's going wrong here?
  2. I have just bought a WD Mypassport Wireless Pro, mainly for the kids in the car. After copying my whole library across I then ready about Optimisation. I have no storage space issues so optimised my entire library on the iMac Media Server and plan to re-copy the library across to the Mypassport. However, should I only copy the optimised versions across? This would seem to make sense but will be a right pain in the proverbial as I will have to copy one film at a time as each film has its own optimised folder.
  3. If I just copy the whole library, how will Mypassport/the kids iPads, know to use the optimised versions only?
  4. Presumably optimised versions are also good for other remote access when the Mypassport is not available. Again, how will be iGadgets know how to use the optimised versions stored on my iMac at home?

Totally confused at the moment so any help appreciated.
