How can I load only movies to my server?

I'm new to Plex so this might be a dumb question:
It seems that my Plex server has grabbed EVERY media file on my computer and now it's impossible to find anything. Can someone tell me how to first remove all the extra files and start over and then how to have ONLY movies load to the server? Thanks in Advance!
